Pastasalade met tuinbonen

Ingredients

  • Conchigliette – 2.5 kg
  • Diced pitted tomatoes – 500 g
  • Blanched fava beans – 500 g
  • Spring onions – 1 bunch
  • Red wine vinegar – 80 ml
  • Canola oil – 160 ml
  • Honey – 1.5 tbsp
  • Flat-leaf parsley – 2 tsp
  • Salt and pepper

Preparation

  1. Make a vinaigrette by mixing the honey with the red wine vinegar, then add the canola oil. Season with salt, pepper and add the finely chopped flat-leaf parsley.
  2. Mix the conchigliette, the garnishes and the vinaigrette. Set aside some of the garnishes for decoration. Taste and adjust the seasoning, if needed.
  3. Arrange the salad in a GN container and use the reserved garnishes to beautifully decorate the salad.
