Our pasta starts with fresh pasta dough.

A mixture of durum wheat semolina, water, a pinch of salt, and sometimes eggs. Nothing more, nothing less.

Our method

From wheat to frozen pasta.

1. Mixing

We combine durum wheat semolina with water to form a homogeneous mixture.

2. Shaping

The mixture is pressed into various shapes using bronze molds.

3. Cooking

The pasta is perfectly precooked ‘al dente’ and lightly coated with oil.

4. IQF

Pasta is quickly frozen: short pasta individually, long pasta in nests of 50g.

Why freeze fresh pasta?

Freezing is the only preservation method to naturally keep fresh pasta for long periods without the use of preservatives or gas.
