Our Chinese noodles are made with durum wheat semolina and egg, which provides a characteristic yellow colour and firm texture. The noodles are precooked ‘al dente’ and IQF-frozen in convenient, loose 50-gram nests.
Portioning in nests offers complete control over food cost and allows for a quick mise-en-place. The noodles can be regenerated directly from the freezer in 75 seconds, supporting an efficient workflow.
The square shape and firm bite make these noodles a versatile base for various Asian preparations. They are ideal for stir-frying, as they retain their structure, but are also perfectly suited for creating meal soups and salads.
- Heat the frozen pasta for 75 seconds in hot, lightly salted water (± 95°C).
- Heat the frozen pasta for approx. 4 minutes in a combi steamer (100°C, 100% steam).
