Greek spring salad
Ingredients
- Mini Macaroni (A8) – 300 g
- Cucumber in brunoise – 40 g
- Radishes in julienne – 3 pcs.
- Red pepper in brunoise – ¼ pc.
- Crumbled feta cheese – 50 g
- Lemon juice – ½ lemon
- Chopped chives – 5 g
- Finely chopped red onion – 10 g
- Olive oil – 1 tbsp.
- Salt and pepper
- Mint (decoration)
- Multicoloured cherry tomatoes (decoration)
Preparation
- Defrost the pasta (to speed up this process, you can also steam or rinse the pasta under running cold water). Place the pasta in a large bowl and cover lemon juice and oil all over it.
- Mix well, season to taste and add the cucumber, red pepper, radishes, onion and chopped chives and mix again.
- Arrange everything in a bowl and garnish with the crumbled feta cheese, mint and cherry tomatoes.
It is possible to prepare this recipe in the cold online. Place the frozen pasta in a dish with the filling on top without mixing (do not add the chives to avoid ‘burning’ by the cold). Cover and let thaw in a cold room. Once thawed, pour in the lemon juice and oil and mix thoroughly.
