Penne with vodka and mascarpone rosso
Ingredients
- Penne (ref. A3) – 300 g
- Mascarpone Rosso sauce (ref. H25) – 100 g
- Butter – 5 g
- Red pepper – 1/2 pc. (following taste)
- Wodka – 4 cl
- Grated Parmesan cheese – 10 g
- Chopped flat-leaf parsley – 1 csp.
- Chopped shallot – ½ pc
Preparation
- Melt the chopped shallot and red chilli in a pan with butter, being careful to avoid colouring.
- Add the mascarpone rosso sauce and mix well.
- Pour the vodka into the sauce and let simmer over low heat for 4-5 minutes. Adjust the seasoning if necessary.
- Reheat the penne into lightly salted boiling water for 30 seconds and drain.
- Add the penne, chopped flat-leaf parsley and Parmesan cheese to the sauce. If necessary, add some pasta cooking water to adjust the consistency.
- Present the dish in a preheated deep plate, garnished with chopped flat-leaf parsley and grated parmesan.
