Penne with vodka and mascarpone rosso

Ingredients

  • Penne (ref. A3) – 300 g
  • Mascarpone Rosso sauce (ref. H25) – 100 g
  • Butter – 5 g
  • Red pepper – 1/2 pc. (following taste)
  • Wodka – 4 cl
  • Grated Parmesan cheese – 10 g
  • Chopped flat-leaf parsley – 1 csp.
  • Chopped shallot – ½ pc

Preparation

  1. Melt the chopped shallot and red chilli in a pan with butter, being careful to avoid colouring.
  2. Add the mascarpone rosso sauce and mix well.
  3. Pour the vodka into the sauce and let simmer over low heat for 4-5 minutes. Adjust the seasoning if necessary.
  4. Reheat the penne into lightly salted boiling water for 30 seconds and drain.
  5. Add the penne, chopped flat-leaf parsley and Parmesan cheese to the sauce. If necessary, add some pasta cooking water to adjust the consistency.
  6. Present the dish in a preheated deep plate, garnished with chopped flat-leaf parsley and grated parmesan.
