Thai serpentini salad

Ingredients

  • Serpentini (ref. A25)
  • Thai Curry (ref. H39)
  • Fried chicken breast (cubes)
  • Paprika trio (brunoise)
  • Apple (brunoise)
  • Sambal Olek
  • Salt
  • Pepper
  • Coriander (garnish)
  • Apple slices (garnish)
  • Spring onion (garnish)
  • Sesame seeds (garnish)

Preparation

  1. Let the pasta thaw according to the applicable food safety standards.
  2. In a mixing bowl, gently mix the Thai Curry sauce, the pasta, sambal oelek and ¾ of the garnish.
  3. Arrange carefully on a deep plate and add the rest of the garnish.
  4. Decorate nicely with coriander leaves, apple slices, spring onion and sesame seeds.

Follow the same instructions for a cold line preparation. Then arrange everything in gastro for counter sales or in trays for take away sales.
