This Tagliatelle XL is made from durum wheat semolina and has an extra-wide, flat shape. The pasta is precooked ‘al dente’ and IQF-frozen in calibrated 50-gram nests, which preserves its freshness and texture.
The nest shape guarantees quick and exact portioning, leading to a predictable food cost and minimal waste. The pasta can be regenerated and is ready for service within 75 seconds.
Due to its width and firm structure, this pasta is the ideal carrier for robust, rich sauces. It pairs excellently with game ragouts, chunky vegetable sauces, and other preparations where the pasta can play a prominent role in the dish.
- Heat the frozen pasta for 75 seconds in hot, lightly salted water (± 95°C).
- Heat the frozen pasta for approx. 4 minutes in a combi steamer (100°C, 100% steam).
